A new dawn for chef Thibault Nizard and his solo career (after stints at Drouant, as well as Chiberta, Taillevent and Guy Savoy). He has set up shop here, between the Louvre and Palais Royal, in a lavish space, where the service team don the full regalia. This technically proficient chef's classic cuisine is underpinned by top-quality produce, which he presents with his own twist. Arriving at your table, the dishes exude influences ranging from Brittany to the Mediterranean – for example, Breton poivrade artichokes glazed in a delicious reduction with Cévennes onion. Three set menus, each with several courses.
