This restaurant in the Eixample district is a meeting of cultures on your plate. In their own words, they play with ‘pre-Columbian roots, colonial heritage, and African influences.’ The space, with plenty of natural plants and vibrant colours, surprises us by featuring several distinct areas: El Patio (an informal area near the entrance that recreates the social spaces found in Latin American homes), Candela (designed for a casual street-style dining experience featuring small bites and cocktails), and Memoria (a more formal dining room, where the à la carte service is complemented by two tasting menus). Colombian chef Santiago Sánchez, who previously plied his trade at renowned restaurants Mugaritz and ARREA!, offers Latin American cuisine with fusion elements that place the spotlight on indigenous communities. Why the name ‘Chambacú’? It is a nod to a historic part of Cartagena de Indias (Colombia)—which no longer exists—that served as a bastion of resistance for people of African descent.
