In a Peruvian version of upstairs-downstairs, this two-in-one restaurant comprises a cebiche and pisco bar downstairs with more traditional dining and a sleeker style upstairs. Luckily, the fantastic cebiches are served both up and down. Causitas are the ultimate spud lover’s comfort food and feature four towers of baked whipped potatoes topped with different flavors: caramelized fatty pork belly and onions; chicken salad dressed in mild aji amarillo; tuna cebiche with cilantro shoots; and slivered roasted piquillo peppers.
Kobe short ribs are glazed with a terrific, mildly spicy aji panca-honey, accompanied by yuca, potatoes and choclo in a creamy huancaina sauce. Sugar-dusted alfajores filled with dulce de leche at the end round out the meal.
