Jan Marrees's trademark is his relaxed approach to gastronomy. A glance at his extensive menu (there are also two set menus, one of them vegetarian) will bring a smile to the face of any foodie. You can opt for one of the chef's specialities such as the crispy fried sweetbreads with an intense veal jus and fruity notes of apple and melon. Alternatively, there is a variety of small, modern delicacies. Zesty and bitter, powerful and delicate, creamy and crispy: every dish is an exciting interplay of flavours and textures made with top-quality ingredients. This is a chef who certainly does not shy away from contrasts and really showcases his talent in the process. The way he puts his own spin on a dame blanche sundae while respecting classic flavours cannot fail to impress.With labels from around the globe, the fantastic wine list certainly has the perfect accompaniment in store, including some attractive pairings by the glass. As for the modern interior – an atmospheric interplay of leather, marble and striking copper chandeliers, adorned with the shells of Gillardeau oysters by hostess Patricia.
