Ta Mien Keng is a noodle soup unique to Taichung. It’s one of a group of shops that have been around for half a century, selling the sort of dishes that are hard to come by nowadays. The chunky noodles in a thick broth are garnished with fried shallots and chives for extra aroma. The house-made chilli sauce not only spices up the dish, but also neutralizes the lye in the noodles. Side dishes such as roast pork and fried tofu are also nicely made.
