In his "méson" (which means "house" in Gallo, the language of Upper Brittany), the chef-owner goes all out Breton, showcasing seafood and other regional ingredients (buckwheat, lait ribot (Breton buttermilk), Coco de Paimpol beans, salted butter) that he sources locally.
