Authenticity is the name of the game in this Landes inn that specialises in hearty, wholesome nosh, light years from fads and fashions. The menu pays tribute to the terroir: Chalosse beef, free-range fattened duck, veal from calves fed on their mother’s milk, pure sheep milk cheese from a village shepherd and home-made sourdough bread (without additives). Examples of the nostalgic score include celery and fennel rémoulade, cream of split peas and crispy slivers of coppa or Jurançon calf’s sweetbread served in a skillet. Warm welcome and attentive, slick service. What’s not to like?
