A proud native of Milazzo, young owner-chef Giacomo has opened his own restaurant in the city and named it after an old local technique (balìce) for preserving fish such as tuna and sardines. In contrast to the traditional name, the dining room and cuisine are both pleasantly contemporary in style, as is the wine list which includes labels from Sicily and further afield, as well as a good selection of cocktails.
