The chef may profess a simple, local approach to cooking, but his food finds its place among its trendy bistro peers on account of its definitively contemporary look. A starter of cauliflower, herring, tarragon and peanuts boasts a pared-back presentation and well-balanced flavours. The chef is also a past master in the art of tradition and roasting joints, a skill set we can only applaud! A welcome addition to the Arcachon Bay culinary scene.
