The blending of Japanese and Western styles is the appeal of creative kappo cuisine here. With its pivot foot firmly in Japanese gastronomy, the restaurant moves imaginatively to incorporate Western elements. For example, the dashi is based on kombu and katsuo but, influenced by French chefs, mixes in fish fumet, the stock from the bones of white fish. To broaden its culinary range, the restaurant added an oven. Roasts and gratins now widen the scope of Otani’s Japanese cooking.
