At this restaurant inside the Hôtel Royal, outstanding produce – Swiss veal and beef, fish straight from Brittany, volaille de Bresse (PDO poultry) – goes into ambitious cuisine with plenty of character. Book well ahead, particularly in the evenings, as there are just four tables.
