Etika: the name of this restaurant just off the main road on the way to the centre of Bidart sums up the project of chef Alexandre Willaume (previously at Aho Fina). His ethical bistronomy cuisine shows a genuine commitment to carefully sourced local produce, which he places centre stage. His sincere dishes are predominantly fish- and plant-based: tuna belly, anchovy and tomato; clams and citron; apricot and granola. With 80% of the cooking done over charcoal, the dishes are perfectly cooked. At lunchtime, choose from the small tapas-style portions to make up your menu; in the evening, they serve multi-course à la carte menu.
