The name is a tribute to the original founder, who opened this modest eatery back in the 1940’s. It has since morphed into a trendy gourmet bistro in the capable hands of an enthusiastic young couple. Originally from Deux-Sèvres, the chef fell in love with the Basque Country and its produce; he has made game his speciality in season. We sampled leek vinaigrette and hard-boiled mimosa eggs, chuck beef stew, mashed potatoes, finishing with orange mousse and meringue – gutsy, rustic and traditional to the core!
