This restaurant, the name of which alludes to “dromomania” (an uncontrollable impulse to travel or wander), and its chef’s personal and professional desire to never stand still for too long, boasts a reception area on the ground floor and a contemporary dining room with a predominantly white colour scheme and geometric decoration upstairs. Here, chef JuanMa Salgado flies the flag for “informal haute cuisine”, hence his desire to always offer guests a truly personal experience by chatting with them at their table. Dining options are restricted to two tasting menus (Viaje and Gran Viaje), the aim of which is to champion the flavours of Extremadura’s native ingredients in recognisable dishes (the meat-based “pringá”, a hearty “puchero” stew, “cachuela” casserole, Iberian pork etc) that the chef has skilfully brought up to date. Dining is only available here Monday to Thursday upon request and by prior booking.
