After the reopening of Hotel Auerhahn, owner Marius Tröndle (who runs the hotel and restaurant Mühle, also in Schluchsee) called on the services of a talented chef for his fine dining restaurant. Yann Bosshammer earned his stripes at some renowned establishments, and now presides here, cooking up innovative, seasonal and regional dishes that showcase premium ingredients in a skilful and visually appealing way. If you are not staying at the hotel, book your table for the five-course "fine dining menu" in advance. The space has been beautifully renovated, with some original features retained, such as the wood-panelled ceiling and striking tiled stove; the comfortable alcoves foster a certain intimacy. Cordial service. The hotel, tastefully modernised, is also an inviting option for an overnight stay.
