And now for a taste of something a bit different. In the heart of Koreatown, tucked away from the tumult and shielded behind a code-locked door, find Nōksu with its glossy black stone counter that stretches the length of the intimate room. Chef Aaron Chang and his team present enticing compositions for a tasting menu that has a Korean bearing and Nordic accent. Seafood is a serious focus with the likes of sea scallop, steamed langoustine and crisped octopus served. Seared beef striploin arranged with torched gjetost-topped eggplant and fermented soybean paste jus precisely sums up the cuisine on offer. An array of impressive treats to end the meal proves the serious approach to the experience at work here.
