In the dining room, the menu is organised into the two tasting menus that have defined the restaurant’s identity: ‘Riflesso’, which focuses more on traditional flavours reinterpreted using contemporary techniques, and ‘Riflessioni’, an expression of the chef’s most creative side, featuring original combinations and avant-garde ideas. Matias Perdomo’s cuisine continues to stand out for its ability to transform and bring out the best in ingredients with character and imagination, in a play of contrasts designed to surprise the palate. The wine list, which now features over a thousand wines, focuses primarily on France and Italy, while also offering a highly interesting international selection.
