After years of acclaim and success as owner and head chef, Pierrot Ayer has stepped down from the management of this hotspot of fine dining in Fribourg. Le Pérolles is now in the capable hands of his son, Julien Ayer, manager and sommelier, and head chef Victor Moriez, who boasts stints at the Hôtel de Ville in Crissier and the Valrose in Rougemont. The culinary score unveils classical and modern influences, the stylish interior bears the hallmark of Mario Botta and the service is slick and seamless. For a ‘simpler’ experience, head upstairs to the bistro-cum-grocery store, le Petit Pérolles, and dig into fresh regional produce in a more casual vibe.
