As soon as you enter this lounge-like restaurant, you are struck by the view of the Western Scheldt and the boats bobbing on the water. Spetters makes the most of its prime location at Breskens marina – lunch on the terrace downstairs is an experience in itself. With his passion for fine ingredients, Laurent Smallegange has been showcasing his skills here since 2011. Whether it's lobster from the Eastern Scheldt or lamb from Sluis, the rich bounty of Zeeland's terroir takes centre stage at Spetters. In his original and unpretentious cooking, international influences and fresh acidity bring vibrancy, and the way he handles the ingredients adds an intriguing edge. Every dish is carefully considered. Smallegange creates a beautifully nuanced combination of exceptionally fresh sea bass, delicately earthy chanterelles, a green herb dip, green herb oil and a vibrant buttermilk-based sauce. His sweetbread dish, paired with Eastern Scheldt eel, is rightly considered a signature. Nothing overdone, just vibrant, delicious cooking!
