A fine example is "snow crab & imperial caviar", which impresses with its delicacy, clarity of flavour and overall balance. The combination of meltingly tender Dover sole, lightly tangy morels, foamy vin jaune and golden-brown cauliflower mushroom is equally refined and stands out for its beautifully accentuated flavours. The set menu is complemented by carefully matched wine pairings. Exceptionally polished service contributes just as much as the harmonious dishes to an enjoyable evening.
