You have to gain a little altitude to reach this village high up in the Pyrenees, which champions its exceptional natural heritage with understandable pride. On the central square, a young couple has injected a sense of enthusiasm into this place, honouring the region's traditions and produce: free-range slow-cooked egg with Noir de Bigorre ham. Other dishes are more contemporary, such as royal sea bream with sashimi and asparagus. The appealing wine list boasts almost 500 wines.
